What are Dandelion Greens?


While most people think of dandelions as pesky weeds, their leaves are nutrient dense and can help to balance blood sugar, decrease inflammation and may help aid in weight loss.


Dandelion greens can be eaten cooked or raw. I like to juice them into a green juice with celery and lemon. You can also sauté them with a little olive oil, chopped garlic, and himalayan sea salt.


They are packed full of minerals like iron, calcium, magnesium and potassium, so if you’re a little low in iron or magnesium - these greens are a great way to add more into your diet.


Dandelion greens are also high in vitamins A, C, and K and also contain vitamin E and folate. 

They contain powerful antioxidants


Dandelion is full of powerful antioxidants that help to neutralize free radicals in the body.


Not only do they contain high levels of beta carotene, but they are also rich in polyphenols. Both of which help to protect the body against chronic disease.

They may help to lower inflammation

In a test tube study researchers noted that cells treated with dandelion showed significantly reduced markers of inflammation. 


The polyphenols found in dandelion greens also help to lower inflammation by reducing oxidative stress on the body. 

They help to balance blood sugar and can aid in weight loss


Dandelion greens contain two bioactive compounds called chicoric and chlorogenic acid which help to improve insulin sensitivity and help your muscles absorb glucose (aka sugar).


Chlorogenic acid has also been shown to support glucose and fat metabolism, which can lead to healthy and sustained weight loss over time.

Here’s how I make a Dandelion Green Juice:

  • 2 handfuls of washed dandelion greens
  • 4 stalks of celery
  • ½ lemon
